Thomas Keller’s Lemon Tart

I love People‘s recipes.

They’re just so straightforward, and easy, and rarely contain anything that I don’t already own.

Take two nights ago, for example: I was reading magazines in bed, and came across this recipe for Thomas Keller’s Lemon Tart. One quick trip to the grocery store for a pie crust, ten minutes or so of “cooking” (not really cooking)…and I was done.

What you need:

1 store-bought graham cracker crust

2 large eggs, cold

2 large egg yolks, cold

3/4 cup sugar

1/2 cup fresh lemon juice (about 4 lemons’ worth)

6 Tbsp cold, unsalted butter, cut into six pieces

What you do:

1. In a pot, bring about 1 1/2 inches of water to a boil.

2. Meanwhile, in a metal bowl (I used a smaller pot), whisk the eggs, yolks, and sugar for about one minute. Set the bowl over the pot to create a double-boiler and whisk for two minutes.

3. Whisk in the lemon juice in three parts. Continue whisking vigorously until the mixture is thickened and light in color (total cooking time: 8-10 min).

4. Turn off the heat and whisk in butter, one piece at a time. Pour the warm mixture into the crust and place the plan on a baking sheet.

5. Place tart under the broiler for a few seconds to brown.

Serve at room temperature or cold.
