Yesterday afternoon, I met my friend Lauren for tea at Le Pain Quotidien, and got to remembering my very visit to the bakery, way back in the dark ages when I lived in LA. I met my friend Heather for lunch, but it one of those days that was so hot we could barely eat, so we decided to just split a plate of figs and goat cheese on big slices of country bread. It was my first time ever trying the combo, and it left a lasting impression: it’s just exactly what you want to eat on a summer afternoon.
For an even lighter option, skip the bread: just pop some halved figs onto a baking sheet, top with a little goat cheese and balsamic vinegar, and bake for a few minutes at 350F.
P.S. Figs are in season mid-late summer and are really at their best when they’re perfectly ripe and fresh, so be sure to try out this dish ASAP!
