Oh my goodness, are peach sorbet cups ever delicious and perfect for a leisurely summer dessert.

A tip, if you decide to make these: after scooping out the peach flesh from the center of the peaches, pop them in the freezer for a couple of hours before filling with sorbet and re-freezing (to minimize sorbet meltdown-potential).
