On New Year’s Eve, a bunch of us headed over to MXCO (which, FYI, has an awesome, super-cheap happy hour with lots of great appetizer options like Coca-Cola Carnitas) while New Year’s Eve dinner finished cooking all on its lonesome. After several hours (because hey, more time in the slow cooker = better), we headed back to our place for Slow-Cooked BBQ Pork (based on this recipe) paired with baked beans, potato salad, and coleslaw.
SLOW-COOKED BBQ PORK (serves 4)
What you need:
2-lb boneless pork loin roast
Season salt
Garlic powder
1 can Coca-Cola
About a cup of BBQ sauce (I used Stubb’s Original)
4 sliced sandwich rolls
Mayonnaise
What you do:
1. Cut roast in half and sprinkle generously with season salt and garlic powder.
2. Place in slow cooker on high for about 3 hours.
4. Add soda and BBQ sauce and cook on low for several more hours, or until pork falls apart when pulled; my pork cooked for about 8 hours total. (Note: I’ve been noticing that I need to cook meals for several hours longer than the recipes I’ve been referencing recommend; perhaps that’s just a quirk of my slow-cooker, but I’d say to leave several more hours than you think you need at first, just so you’re not left eating dinner at midnight.)
5. Serve on rolls spread with a little mayo.
