I spent a lot of time in Maine as a kid, which means I spent a lot of time eating blueberries. And to this day, whenever I start getting excited about the warm months to come, I start craving blueberry pie. Alas, the berries in my local supermarket weren’t spectacular on Sunday, when I went in search of my ingredients, but no matter: frozen works beautifully as well.
EASY BLUEBERRY PIE
What you need:
1 package (about 3 cups) frozen blueberries
3 tbsp flour
3 tbsp cornstarch
2/3 cup sugar
1 tsp cinnamon
1/4 tsp salt
2 tbsp lemon juice
What you do:
1. Gently mix together blueberries and all dry ingredients in a large bowl. Stir in lemon juice.
2. Pour into one pie shell, and then top with the other. You can either stab the top shell with a fork a few times, or cut a pretty design (like my heart) into the center (do this when the pastry is still on a flat surface, before placing it on top of the blueberry mixture).
3. Bake at 375F for about an hour, or until golden. Allow to cool thoroughly before serving.
