I have a major mango problem lately.
I cannot stop eating them. As cravings go, though, this is a pretty stellar one to have, since mangos are full of amazing things like antioxidants, fiber, Vitamins C and E, and folic acid. (They’re especially good for your skin: Vitamin A helps to maintain a healthy complexion; antioxidants protect against free radicals; beta carotene makes your skin glow.)
And now my son is obsessed with them, too. The other night I showed him how to cut up a mango, and remembered my grandfather – who ate a mango after dinner almost every night of his life – showing me the same thing when I was a little girl, and got teary about it.
In short: there are a whole lot of mangos coming into this house on a weekly basis, and Kendrick does not get to eat any of them. (He made the mistake of eating The Last Mango one night, and paid for it with a 9P.M. trip to Stop ‘n’ Shop.)
At the Simple Skincare #KindToCitySkin Event
Now that I know about this smoothie we’ve gone next-level. I discovered it at a Simple Skincare event in Times Square that I attended a few days ago; nutritionist Ellie Krieger was whipping them up and handing out samples. I had four, wished that I had more, and then decided to just go ahead and make a full-sized smoothie for myself once I got home.
Oh my goodness, it is delicious.
Serves 2
What You Need:
1 ripe mango, pit and skin removed
3/4 cup plain Greek yogurt
1 tbsp honey
1 cup ice
What You Do:
Combine all ingredients in blender and blend until smooth and frothy. Serve over ice, if desired.
