If you need to line a baking pan with foil (as we did for yesterday’s butter pecan ice cream loaf), first flip the pan over and shape the foil to the underside. Once you’ve turned the pan upright, the foil should slip in easily. Witness:

See? Much easier – and neater-looking – than mashing the stuff around until it conforms to the inside of the pan. (If you need to cover the top of the dish with foil as well, be sure to leave a sufficient amount hanging over the sides, as pictured above).
