When it comes to Thanksgiving side dishes (and Thanksgiving generally), I am all about zero kerfuffle (I’ve always wanted to use that word). It’s stressful enough having millions of relatives running around…you don’t need to be tinkering with complicated seasonings and fussy sauces in the meantime.
This Sweet Potato Casserole is as minimal-effort as it gets, and yet it was probably the most popular dish at last night’s Thanksgiving dinner.
SWEET POTATO CASSEROLE
What you need:
1 box prepared Stovetop stuffing (either chicken or turkey flavor…or you can make your own from scratch, of course)
About a cup of mushrooms, chopped
1 small yellow onion, chopped
4-6 sweet potatoes, peeled, washed, and chopped into 1″ pieces
3 tbsp butter
Splash of milk
Grated white cheese (whatever you have handy; we used mozzarella)
Olive oil
Salt & pepper
What you do:
1. Boil sweet potatoes. Drain and mash together with butter, milk, and salt & pepper to taste.
2. Meanwhile, saute mushrooms and onion in a small frying pan until onion is translucent. Add to prepared stuffing.
3. Spoon stuffing mixture into a casserole dish, and top with the mashed sweet potatoes, being careful not to mix the two layers together.
4. Sprinkle over a little cheese. That’s it!
