What I’m serving up tomorrow night: a coffee-table picnic featuring three of our all-time favorites.
Asparagus, Bacon & New Potato Salad
(And of course prosecco.)
If you’d like to do the same, I’ve compiled a handy shopping list for you (serves 2-4):
– 1 whole chicken, preferably free-range and organic
– 4-8 prosciutto slices (depending on how much you like)
– 2 lemons (1 for the chicken, one for the salad)
– Fresh garlic
– 1 bunch parsley or thyme
– 1 bag small new potatoes (or you can quarter larger ones)
– 1 bunch asparagus, preferably skinny
– 8-10 slices thick-cut, excellent-quality bacon
– 2 deep-dish frozen pie crusts (thawed)
– 5-7 mixed apples
– Sugar (1/2 cup white, 1/2 cup brown)
– 1 tsp cinnamon
– 3 tbsp flour
– Butter (you’ll need about a cup and a little extra; 1 cup for the chicken, and another couple of tsp for the pie)
– Olive oil
– Salt & pepper
