Dos Caminos / Enchiladas Inspiration
I make enchiladas in the quickest, simplest way possible (about 20 minutes start-to-finish, assuming you're using pre-cooked chicken), so be forewarned: this is not a recipe for purists.
Things Change
I’m still a meat-eater, obviously, and my love of meat (or belief that meat-eating, if done responsibly, is healthy, natural, and basically A-OK) isn’t going anywhere. Perfect-est Roast Chicken
I'm a big chicken-eater, and love the stuff prepared in lots of different ways. When it comes to roast chicken, however, I really do think that the simpler the better, and tend to work within a pretty basic flavor spectrum involving lemon, garlic, fresh, subtle herbs like parsley and lemon thyme, and salty meats like prosciutto.
Strawberry-Infused Tequila
I love making fruit infusions (they make excellent DIY gifts), and strawberry-infused tequila is a simple, delicious way to use up the last of the summer's strawberries.
