Summer Cocktail: Vodka Strawberry Spritzer

I was just looking through photos from last summer, and came across this shot of Francesca and me at the Soho House pool (sigh) drinking vodka-strawberry cocktails. And now I want one. What? It’s almost noon.

If you want one, too (and really, who doesn’t?), here’s whatcha do:

1. In a shaker, muddle together a few strawberries and a squeeze of lemon.

2. Fill shaker with ice and add vodka; shake well and pour everything (including strawberries and ice) into a glass.

3. Top with club soda (more or less depending on how strong you want the drink to be) and give a quick stir.

4. Garnish with mint sprig or strawberry slice.

I tried a pretty awesome summer drink the other night at Caracas Arepa Bar – a “mojito violeta:” white rum, blueberry juice, mint, seltzer aaaaand… lavender extract! Tasty and very pretty.

Freaking yum!! I'm all about the strawberry cocktails lately!

Last night I drank nearly an entire bottle of sparkling rose mixed with homemade strawberry compote. (About a tablespoon of compote in champagne flute, topped with rose). An EXCELLENT way to eat fruit.
