Mixed Green, Pomegranate & Avocado Salad

I served those lovely chicken and peach turnovers with a simple (and pretty) side salad:

Serves 2

2 large handfuls mixed greens

+ 1/2 avocado, diced

+ seeds & juice from 1/2 pomegranate (watch out for that stuff; it instantly stains anything it touches)

+ 2 tbsp goat cheese

+ 1/2 tsp lemon juice

+ Olive oil, salt, pepper

    To avoid a pom juice accident that looks like a murder scene, don’t do it the Martha Stewart way (beating it with a spoon–does NOT work that way for normal people).  Score it 4 to 8 times, depending on the size, slice off the top, and submerge it in a large bowl of water while you peel and de-seed.  I know that’s exactly how Martha says not to do it, but she can’t always right about everything.  I am, after all, the pom expert since I eat my weight in them every Christmas (I usually even ask for poms instead of “normal” gifts). 

    With all the poms I’ve eaten over the years, I’ve never once wound up with anything stained except my fingers and lips–and that’s just because I shovel the pips into my mouth with my hands.

    THANK YOU for the advice! I very nearly avoided major disasters while trying to de-seed my pomegranate – will do this next time.
