Eat This Now, I Mean It: Grilled Cheese with Bacon & Avocado

Ever since I had my first for-real grilled cheese experience a little over two years ago (not a joke; I went twenty-eight years before discovering the wonder that is melted cheese on toasted bread; and to answer your question, no, not even as a kid – my mother is an alien who doesn’t like cheese and never really kept any in the house), I’ve been sorta obsessed with them. I’m generally of the opinion that simplicity is key when it comes to food like this – give me Kraft Singles and Wonder Bread, and I am a happy lady – but sometimes the addition of things like bacon and avocado makes a dish just worlds better.

Oh, who am I kidding with that “sometimes” jazz?

Bacon and avocado always make a dish worlds better. Even (especially?) chocolate ice cream: bacon and avocado make that stuff better, too. (Try it.)

A little discovery I made last night: rather than spreading butter (or mayo) directly onto the outsides of the bread, which is both messy and a pain when you’ve forgotten to bring your butter to room temperature and it’s all hard and unspreadable, just pop a big dollop of it in a heated pan and let it get foamy before adding the sandwich. When you’re ready to flip the bread, just balance it on your spatula for a moment and let a little more butter melt in the pan before frying the other side.

Oh, and use really good bacon. Like, really good. Expensive. It’s worth it.

(I know, it doesn’t look like there’s bacon in there. That’s because there isn’t. I used up all our bacon in last night’s grilled cheeses, and then devoured them like a crazed velociraptor before I could even take a photo, so what’s pictured above is today’s sadly baconless lunchtime replica.)

    can i ask a stupid question? what is the best/easiest way to cook bacon (perhaps they aren’t the same though)? you mentioned getting more expensive bacon as its worth the splurge, but now i’ve got some in my fridge, and i’m kind of daunted by how to cook it (okay. full admission. i am a baker not a cook. i have four dishes i can make basically. so i get that this question makes me sound incredibly naive/lame) my mom always cooked it in the microwave on stacks of paper towels, which i guess i can figure out to do, though i wouldn’t even know how to start it. or do you just put it in a hot pan and fry it? does it smoke up your kitchen (which is something i do have experience with)? somewhere i read you can broil it in the oven, but that sounded crazy and i didn’t have a broiling pan (or whatever they are called) until like yesterday when i discovered one in that drawer below the oven (i mentioned i don’t really cook!!)

    lol – not crazy at all. my mom puts her bacon in the microwave too :) honestly, i do the same if i’m using cheap stuff and in a rush (and not in the mood to do dishes), but it does come out better if you fry it on the stove. just lay the slices flat directly into frying pan (not overlapping, but you can fill the pan), and the fat that it releases will prevent it from sticking. let the pan heat with the bacon in it to prevent burning. i try to flip it just once, but you may have to flip it a few times while you get the hang of it. and then when the bacon is done, remove it from the pan with tongs and place it on paper towels to let the grease drain off.

    alternatively, you can cook bacon in the oven: just place them on a baking sheet (or slotted pan) and bake at 350 for fifteen minutes or so. you can try coating the bacon in maple syrup when you do this – YUM.

    I WHOLEHEARTEDLY agree with your command to use good bacon! I only recently became aware of the existence of good bacon (I guess I just figured it was all the same?!) and it has been life. changing.

    Ha, I live in Paris now and can’t get cheddar or regular bacon. It’s the little things like this that I miss.

    Benton’s bacon is the absolute best bacon you can buy in the states. Whenever I’m down South, I make sure to pick some up.
