Corn & Avocado Salad

Inspired by Real Simple’s 3-Ingredient Meals, I made this last night:

CORN & AVOCADO SALAD (serves 4 as a side)

Boil 2 ears of sweet corn until just cooked. Use a sharp knife to remove kernels, and toss in bowl with one diced avocado and three thinly sliced scallions. Dress with 3 tbsp olive oil, 1/2 tsp lemon juice, sea salt, and freshly-ground pepper.

(Served alongside chicken, pea & mushroom stir-fry over rice. The pairing made absolutely no sense but nicely used up all the veggies I had in my refrigerator, and was completely delicious.)

    Jordan, this comment isn’t related to this very yummy looking salad. A while back, you posted about the wonders of coconut oil and about its many uses. I’ve been using it as makeup remover. It is the best makeup remover ever, doesn’t hurt my eyes, and smells delicious.

    Hey Jordan! I made this salad tonight for dinner and IT WAS AMAZING!!! I have only started reading your blog recently, (congrats on the baby, btw!) but I can’t wait to try more recipes you post! :)
