A couple of weeks ago I met a girl, Judy, who makes her own vodka infusions. I sampled her pineapple infusion and…unbelievable. I’m not much of a vodka-sipper, but this tasted like dessert.
PINEAPPLE VODKA INFUSION
Cut up a pineapple into chunks and submerge in the container of your choice with the contents of a large bottle of vodka (you can use a more inexpensive brand than usual, because you’re going to end up mostly just tasting the pineapple anyway). Cover and set aside. After 4 days, remove the pineapple chunks and place them in your freezer (these can be used as ice cubes later). Cut up a new pineapple and add to the vodka. Infuse for another 4-5 days. Serve straight up, or with pineapple-vodka ice cubes.
