Go-To Citrusy Chicken Salad

This is another one of those “Hmm…what do I already have in the refrigerator that will allow me to eat while skipping the whole ‘going to the store’ thing” meals. It’s also a light, clean way to get in a ton of protein and green stuff, if you’re feeling like your nutrition level could use a little kick. Cost: about $15 for 2 generous servings.

Just drizzle a couple of chicken breasts with olive oil and lemon juice, season with salt and pepper, and grill until cooked through (love my George Forman!). Then chop up your chicken and toss it into a big bowl along with baby spinach leaves, steamed peas (and/or steamed asparagus & avocado), about 2 tbsp of crumbled goat cheese, the juice from half a lemon, and some olive oil, salt, and pepper. (Walnuts and cranberries make delicious additions to this salad, as well.)

Olivia asked: Jordan, can you tell me a little more about making meat in the GF grill? I don’t have one, but I’m thinking it would be easier to cook in that then over cook the chicken in a pan/oven. Are they easy/hard to clean? Do they really make the meat taste good? Thanks!

I’ve had a George Forman for years, and I use it all the time – it’s especially great for grilling up a single chicken breast/piece of fish/some veggies with zero fuss (go for a bigger model if you regularly cook for more than two people). And yes, it is ridiculously easy to clean – infinitely easier than pots and pans (everything should come right off with a damp rag). And re: whether they make the meat taste good…well, since you don’t have a ton of control over the temperature, sometimes you end up with a slightly overcooked exterior (especially if you’re cooking multiple things and some pieces are thicker than others), but overall my experience has been that it’s an excellent option for straightforward preparations (or if you’re planning on chopping up whatever you’ve cooked and putting it into, say, a salad).
