Black & White Buckeye Pops!

Last week, Kendrick’s Aunt Nancy sent us a care package containing everything we needed to make Buckeyes (plus a recipe), and our lazy Sunday afternoon was the perfect time to give them a spin.

BLACK & WHITE BUCKEYE POPS (Buckeyes recipe via)

What you need:

  • 1 1/2 cups peanut butter
  • 1 cup butter, softened
  • 1/2 teaspoon vanilla extract
  • 6 cups confectioners’ sugar
  • 4 cups semisweet chocolate chips (I also used a cup of white chocolate chips)
  • Toothpicks

What you do:

1. In a large bowl, mix together butter, peanut butter, vanilla, and sugar. The dough will look extremely dry. (This step requires a bit of muscle, and would be greatly facilitated by the presence of a stand mixer.)

2. Line a baking sheet with wax paper. Press and roll the dough into 1″ balls and set on wax paper.

3. Put a toothpick into each ball and put everything into the freezer for 30 minutes so the balls firm up.

4. Melt the chocolate in the microwave (microwave it in 30-second intervals, stirring between each interval until smooth) and dip each ball, leaving a little of the dough showing at the top.

5. Let cool several minutes, and then dip halfway in melted white chocolate. Allow chocolate to set, and then store in the refrigerator in an airtight container in a single layer.

I know the toothpicks are supposed to be just for dipping purposes, but I like the idea of Buckeye Pops even better than Buckeyes, and think they would make great desserts at a cocktail party or wedding (try color-coding the toothpicks to your decor or finding little decorative ones with tinsel attached for a kitschy-but-cute look).
