Joanne’s Baked Beans

Baked beans are another of those tragically unphotogenic yet fabulously delicious dishes, and my Aunt Joanne makes a better version than anyone else (including Mr. Bush, who I’ll admit does quite a job).

JOANNE’S BAKED BEANS

1. Soak 1 package of yellow-eyed beans overnight.

2. Drain beans and put into a crockpot with the following: 1/2 cup molasses, 1/4 cup ketchup, 1 diced onion, 2 heaping tbsp butter (or some pork fat), salt & pepper to taste, and water to cover.

3. Cook about 6 hours, uncovering for the last 1/2 hour to thicken.
