A midnight snack of Applesauce Meatloaf and buttered rolls courtesy of my awesome Aunt Trudy. Did you know that, although very delicious, meatloaf is quite unphotogenic? It is. I tried taking a close-up, and…just no.
But make it anyway!
APPLESAUCE MEATLOAF (From a 1970s Better Homes & Gardens cookbook)
What you need:
1 beaten egg
1 cup soft bread crumbs
1 8 1/2 oz can applesauce
2 tbsp finely chopped onion
2 tsp prepared mustard
1 tsp dried celery flakes
1/2 tsp salt
Dash pepper
1 1/2 lbs ground beef
1 tbsp brown sugar
1 tbsp vinegar
1/4 tsp ground allspice
What you do:
1. In a bowl, combine the egg, bread crumbs, 1/2 cup of the applesauce, onion, 1 tsp of the mustard, celery flakes, salt, and pepper. Add ground beef; mix well.
2. Shape meat mixture into a round loaf in a shallow baking pan. Make a depression in the top of the loaf.
3. Combine the remaining 1/2 cup applesauce and 1 tsp mustard; stir in the brown sugar, vinegar, and allspice.
4. Spoon applesauce mixture into the depression, and bake at 350F for 50-60 minutes.
