BREAKFAST FOR DINNER (serves 1)
What you need:
1 potato, cubed (not peeled!)
Half of an onion, roughly chopped
1 egg
Olive oil
Salt & pepper
Optional: a little minced garlic or garlic powder
What you do:
1. Add about a tablespoon of olive oil to a heavy-bottomed frying pan. Throw in your onions and potatoes (and garlic, if using), season well, and cook over low heat for about 25-30 minutes, stirring pretty constantly (I just flip through a magazine while I stir). You need to keep it all moving because the point is just to caramelize the potatoes and onions, not to darken them too much.
2. When the potatoes are tender (just taste one to check), push everything off to one side and fry up an egg in the space. Adjust seasoning, and serve as pictured above.
