Our simple, delicious brunch: country white bread with apple butter and scrambled eggs with mushrooms, onions and goat cheese.

SCRAMBLED EGGS w/ MUSHROOMS, ONIONS & GOAT CHEESE (serves 2)

What you need: 

4 eggs

A couple of splashes of milk

1/2 package white mushrooms, chopped

1/4 white onion, finely diced

2 tbsp goat cheese

Olive oil

Garlic salt & fresh ground pepper

What you do: 

1. In a small frying pan, cook onion and mushrooms in a little olive oil until tender. Season with garlic salt & fresh ground pepper. Set aside. 

2. Whisk together eggs and milk.

3. In another frying pan, melt 2 tsp butter and scramble eggs.

4. When eggs are just about done, add goat cheese and onion/mushroom mixture (don’t add the mushrooms and onions too soon, or the eggs will turn brown…they won’t taste bad, but they won’t be as pretty as they can be). 

5. Serve alongside toast with apple butter and a little fresh fruit.
