Meghan, Megan and I went over to Dave’s early to set up for the party. We put out platters of cheese, meats, and vegetables, made a version of the Dead Man’s Icy Hand punch I wrote about earlier (sans food coloring, alas), and whipped up some stuffed mushrooms, which turned out great.
STUFFED MUSHROOMS
What you need:
4 packages white mushrooms, cleaned and stemmed
1 bag bread crumbs, crushed
2 cups grated pecorino cheese
A few pinches of finely chopped parsley
Olive oil
3 garlic cloves, finely chopped
Garlic salt or regular salt & fresh-ground pepper
What you do:
1. Preheat oven to 400F
2. Wipe down a baking tray with olive oil
3. In a large mixing bowl, combine bread crumbs, cheese, parsley, garlic, salt, pepper, and a few glugs of olive oil.
4. Stuff mixture into mushrooms and arrange on baking tray. Drizzle over a couple more tablespoons of olive oil.
5. Bake for 25 minutes.
