On the way home from Marshalls I came across a street fair on Lexington, and had to stop for fresh roasted corn with honey butter. I was briefly tempted by the MozzArepa (mozzarella sandwiched inside cornbread) stand, but it was too close to dinnertime to eat that much, so I passed.
1/2 cup butter
1/2 cup honey
Beat butter in a bowl well, until it is light and fluffy (use an electric mixer if you have one). Continue mixing while slowly adding in the honey. That’s it!
