Dinner at 44 1/2 with Scott and Dad (I told you I go there every time I see my parents). I had bacon-wrapped cod (a surprising combination that worked, I think, because cod is a relatively dense, meaty fish, so it wasn’t overpowered by the bacon) with avocado/mango relish (sweet and refreshing, and would work well alongside lots of different fish entrees). Here’s how I would make it:
SWEET SALSA
Cube 1 ripe mango, 1 avocado, and 1 tomato. Add a handful of chopped cilantro, 1/4 of an onion, finely diced, and toss with olive oil, sea salt, and a squeeze of lime.
